This pumpkin-shaped baked brie is one of the easiest, most customizable appetizers you’ll ever make! It comes together in minutes and delivers a stunning centrepiece without needing a long grocery list. Just wrap your brie in puff pastry and don’t worry about perfection! The rustic look only adds to the cozy fall charm. Surround it with whatever you have in your pantry, nuts, crackers, cured meats, olives, caramels, or candy corn, and you’re done!
Tip * When assembling your board, start with the larger items like the pumpkin brie, then add smaller items like crackers, breads, and meats. Finally, finish off with small items to fill in spaces like fresh fruits, chocolates, nuts, and berries.
Ingredients
- 2x 200g brie cheese
- 1 roll of puff pastry, cut in half
- Kitchen twine
- 1 egg
- 1 tbsp milk
Directions
- Remove one roll of puff pastry from the freezer and let it sit for 2 hours, until it has defrosted.
- Preheat the oven to 400 degrees F.
- Once the puff pastry has defrosted, cut it in half widthwise and place a circle of brie in the center. At this stage, you could also add fig jam or honey on top of the brie to add sweet notes.
- Fold the edges of the puff pastry around the brie to completely close it. Then, using twine, wrap the brie as if you were wrapping ribbon around a package. This will form your pumpkin shape. Be careful to not wrap the string too tightly to prevent it from cutting into the pastry.
- In a bowl, beat together the egg and milk, then brush the egg wash over the top and sides of the puff pastry.
- Bake it in the oven for 25-30 minutes or until golden brown.
- Once it is finished, garnish the pumpkin with a cinnamon stick for the stem, or, like we did, with oregano flowers and sage.
