Cheese Steak Sliders
Makes 12 sliders
Ingredients:
- Mini brioche rolls
- 1 lb thinly sliced roast beef
- 12 slices Swiss cheese
- 1 sweet onion, sliced
- 1 green pepper, sliced
- 1 tbsp avocado oil
- ½ cup salted butter, melted
- Grated Parmesan and fresh parsley for garnish
Instructions
- Preheat oven to 375 degrees F.
- Sautée onions and peppers with avocado oil until golden all around and slightly charred on the edges. Set aside.
- Keeping the brioche buns connected, slice both groups of 6 buns in half as if you were making one big sandwich.
- On a baking sheet, layer sliced roast beef, onions, peppers, and Swiss cheese onto the bottom half of the brioche buns. Place in the oven just long enough for the cheese to melt.
- Once melted, turn the oven to broil and place the top halves of the buns on the sandwiches, then leave in the oven for another 1-2 minutes, or until the buns are nicely toasted on top but still soft on the inside.
- Brush the top of the sandwiches with butter, garnish with parmesan and fresh chopped parsley, and enjoy.
Mini Baked Potato Bites
Makes
Ingredients:
- 1.5 lb bag of Yellow mini potatoes
- 2 tbsp avocado oil
- 2 tsp Salt
- ½ tsp pepper
- 1 tbsp olive oil
- ½ cup Sour cream
- 8 slices of turkey bacon, diced
- 4 tbsp thinly sliced chives for garnish
Instructions:
- Preheat the oven to 375 degrees F.
- Using a fork, pierce two sides of the potatoes. Toss the potatoes in avocado oil, salt and pepper.
- Pour the potatoes onto a baking sheet lined with parchment paper, cover with foil, then place in the oven for 45 minutes.
- While the potatoes are cooking, slice chives and set aside. During this time, you can also begin to cook the chopped turkey bacon in a nonstick skillet over medium heat for 3-5 minutes.
- Once baked through, remove from the oven and cut a small slit into each potato, being careful not to cut all the way through.
- Drizzle olive oil over the potatoes, then add a dollop of sour cream onto each. Sprinkle turkey bacon and chives over top, and they are ready to eat!
